  1. {Take 1 bowl of leftover cooked Rice.

  18. {Make ready 1/3 of sambhar masala (I used 777 sambar masala).
  19. {Make ready 1 tbsp of cooking oil and deshi Ghee.
  20. {Get as needed of Coriander leaves to garnish.

Steps to make Tomato Rice:

  1. Take a wok. Heat the oil mix. Add high, mixed seeds and let it crackle. Now and Urad Dal and chopped Curry leaves and fry in low medium flame till the aroma comes out..
  2. Add chopped onions and green chilies to the pan and cook for 1 min. Put the veggies, chopped tomatoes,salt and turmeric powder, Sambar powder and cook till veggies are cooked..
  3. Now mix the cooked Rice, ground nuts, Cashew nuts, grated ginger and 2 tsp of water..
  4. Mix well the Rice with the masala and cook covered for 1 min in low medium heat. A beautiful aroma comes out. Now Tomato Rice is ready to serve..
  5. Garnish with chopped coriander leaves and serve hot as such or with any subzi / Chutney. Thanks 🙂.
